Manju Dewan: Tomatoes in this season are mostly used in salads. However, this royal red vegetable forms a tasty dish by itself. Semi-cooked tomatoes lead to the release of Lycopene, which has immense nutritional benefits. So, here is a mouth-watering tomato recipe involving tomatoes.
Hungarian Tomato Magic: 
Ingredients
  • ½ cup cottage cheese
  • ¼ cup onion 
  • ½ tsp cumin seeds
  • ¼ tsp black pepper powder
  • 1 tsp green chilli, finely chopped
  • 1 tbsp white vinegar
  • 1 tbsp peanut powder
  • ½ tsp salt
  • 4-5 tomatoes
For garnish: 
  • A few leaves of parsley or coriander
Method: 
  • Take a tomato and cut its top. Scoop out the seeds. Repeat with the remaining tomatoes and keep them in the refrigerator. Blend the onions in a blender. Add cottage cheese, cumin seeds, peanut powder and green chilli; blend again. Add vinegar and mix well. Refrigerate them. To serve, fill the cottage cheese mixture into the tomato. Kandla Nijhowne: Most of us are hesitant to attempt baking bread at home. The science of a living organism, which gets activated when in contact with sugar and warmth, seems such a wondrous mystery. Here is a recipe, which uses potatoes in the baking process. When the baking commences, the enticing aroma wafts through and the house smells like home! (Nijhowne is a Chandigarh-based culinary expert) Moist Herbed Potato Bread: 
  • 150 gm peeled,chopped potato (2medium ones)
  • 1½ tbsp extra-virgin olive oil
  • ½ tsp sugar
  • 2 tbsp lukewarm water
  • 1¼ tsp active dry yeast
  • 1½ cups ‘atta’
  • 2-3 tsp mixed dried herbs
  • 1¼ tsp salt
  • 1½ cups maida
  • 2-3 tbsp cornmeal
  • 1 cup chopped green shoots of spring onion
  • 1 egg white
Method: 
  • Use a pan, add potatoes, cover with water and cook till tender. Drain and keep aside one cup of cooking liquid.
  • Mash the potato cubes with the olive oil. Allow the liquid to cool.
  • Dissolve the sugar in 2 tbsp of warm water; then sprinkle the yeast on its surface. Stir and let it stand for 5-7 minutes until foamy. Mix this into the potatoes along with the cup of liquid.
  • Beat in the ‘atta’, the mixed herbs and salt.
  • Now gradually knead in the maida until you have a stiff dough. Knead for 10-12 minutes till smooth and elastic.
  • Transfer the dough into a lightly oiled bowl, cover with cling film and allow it to rise (1½ hours)
  • Pre-heat oven to 450 degrees F (230 C).
  • Divide the risen dough into two portions. Shape into loaves or round spheres, place on a flour-dusted baking sheet. Allow them to rise again (1 hour)
  • Beat 1 tbsp water with the egg white and use it to brush over the loaves. Bake the loaves for 20 minutes. Reduce oven temperature to 400 degrees and bake until the loaves are golden and the bottoms sound hollow when tapped, 10 to 15 minutes.

  • Ayurvedic Tea for Digestion: Take 1 tsp each of cumin, coriander seeds, and fennel seeds. Also take 3 cups of water and honey. Boil water and after removing from flame, soak the ingredients, except honey, in it for about 5 minutes. Strain and add honey to make it sweet.
  • Soothing Tulsi Tea: Take 50 gm Tulsi, 7.5 gm Dalchini, 5 gmBrahmi, 15 gm Banafsha, 25 gm Saunf, 15 gm Iliachi dana, 25 gm each of Lalchandan and Kali Mirch. Ground them and boil the mixture in water.
  • Banafsha Tea for Cough and Cold: Take 60 gm Banafsha, 15 gm Kulanjan, and 20 gm Mulathi. Ground them and boil the mixture in water. Add one drop each of peppermint and eucalyptus oil.
  • Jushanda Tea for Relief in Asthma: Take 30 gm Mulathi, 15 gm Somavali, 25 gm Vasaka, and 2 gm Naushadar. Ground them and boil the mixture in water.
  • Herbal Diuretic Tea: Take 26 gm Hauber, 24 gm Gokshru, 25 gm Varun, and 25 gm Punernava. Ground them and boil the mixture in water. It is a diuretic agent which increases the volume of urine excreted and prevents the formation of stone and also dissolves the kidney stone.
  • Anti-oxidant Keshar and Green Tea: Take 5 gm Jaiphal, 4 gm Javitri, 50 gm Dalchini, 1 gm Keshar, and 40 gm Ashwagandha. Ground them and boil the mixture in water. For anti-oxidant green tea recipe, add 10 gm green tea leaves, and 1 gm each of Dalchini and Iliachi with sugar (as per taste) in water. Boil to get the tea.
  • Herbal Laxative Tea: Take 90 gm Senna, and 10 gm Dhania. Ground them and boil the mixture in water. It helps in relieving constipation.
  • Vata Dosha Tea Recipe: Take 1/4 teaspoon each of freshly grated ginger, ground cardamom, cinnamon, ajwan seeds and 1 cup water. Mix all the ingredients. Boil the water and add the herb mixture to it. Steep for 5 minutes. Strain and then serve. It balances the vata dosha.
  • Pitta Dosha Tea Recipe: Take 1/4 teaspoon each of cumin seeds, coriander, fennel, fresh cilantro, rose petals, and 1 cup water. Mix all the ingredients. Boil the water and add the herb mixture to it. Steep for 5 minutes. Strain and then serve. It balances the pitta dosha.
  • Kapha Dosha Tea Recipe: Take 1/4 teaspoon each of dry ginger, dill seed, fenugreek seed, 1 clove , and 1 cup water. Mix all the ingredients. Boil the water and add the herb mixture to it. Steep for 5 minutes. Strain and then serve. It balances the kapha dosha. Source: Article

Today, ice cream and gelato have become lifestyle products rather than seasonal ones,” says Paramjeet Singh, director of Gianis Ice Cream. Singh’s father started the popular home-made ice cream store in the ’50s, which now has 35 branches all over North India — a testament to the cult following frozen desserts enjoy. Adds Michael Schauss, Executive Chef of the Pullman Gurgaon Hotel, “Gelati have become widely popular owing to their all-natural ingredients and low fat content, as people are becoming more conscious of healthy eating. The wide range of flavours that can be incorporated into them add to the popularity.” Gelato is a healthier option than the conventional ice cream as it has less fat, since it is made with a greater proportion of whole milk to cream. This difference (gelato’s 5-7 per cent fat as compared to ice cream’s 10 per cent), as well as the fact that gelati are a lot softer and creamier, have boosted the Italian dessert’s glory. Restaurants, especially different contemporary cuisine eateries, now regularly feature ice creams, gelati, sorbets and parfaits to accompany their main dishes or act as “palate- cleansers” between courses. Says celebrity chef and restaurateur Ritu Dalmia, “We use gelatis extensively in our restaurants and cafes. In Diva for example, we have a tomato and basil sorbet, which accompanies a tomato salad. Plus, of course, desserts are enhanced with flavours such as beetroot and balsamic vinegar or a candied orange and ricotta. It is no longer about just regular flavours, it is about an experience. When I eat a wild berry gelato, I should be able to smell and taste the forest.” Given the weather, “cold plates” are also in vogue. Akshay Batra, COO of Gelato Vinto, deconstructs the concept, “Built on the principle of a hot plate, a cold plate emanates cold waves instead of heat. So, we can set it up at caterings, with a variety of flavours of gelato and different toppings and fillings. And then, we can mix them on the counter and customise gelato sundaes,” he says. For instance, in Sen5es at the Pullman, the concept is being marketed as an ice cream teppanyaki station. Schauss says, “Incorporating the teppanyaki style to customise ice creams appeals to the child in all of us. The indulgence of adding one’s own choice of treats — marshmallows, jujubes, M&Ms, chocolate bars or sweet sauces — to one’s favourite ice cream flavour is a pleasant trip down memory lane, to a childhood when one tried to enhance the “special treat” to make it last that bit longer.” Batra agrees. “There is a rising demand for more unusual flavours from big hotels and top restaurants across the NCR. They want gelati incorporated with alcohol, wines and savoury flavours. One of our clients gave us a recipe of their soup, which they wanted converted into a sorbet format,” he says. Gelato Vinto supplies to hotels such as the Taj, Claridges, Leela’s and Hyatt, all of whom have their own esoteric favoured flavours. On the other side of the coin though, there is also an upswing in incorporating Indian flavours into the Italian dessert. “This season, in order to provide a wider choice to consumers, we launched a range of Super Coolers range — Cola, Kala Khatta, Pineapple, Orange, Kokam, Kacchi Keri and Black Grapes. Adults can enjoy this drink as it is. Glass used: Hi-Ball glass, watermelon (tarbuj) cubes, deseeded 3 cups, milk powder 2 tbsp, sugar syrup 3 tbsp, lemon juice 3 tsp, crushed ice 1 cup, For the garnish, 4 watermelon (tarbuj) wedges, A sprig of mint leaves (pudina), Combine all the ingredients and blend in a mixer till it becomes smooth, In each Hi-Ball glass, pour equal quantity of the above juice and freeze for 3 to 4 hours. Serve immediately garnished with a watermelon wedge and mint leaves. Green Goddess Sorbet: Sorbets are healthy and low in calories, as they are made with fruit juices. However, I made them lower in calories by using sugar substitute instead of sugar. Ginger juice adds an extra zing to this sorbet. green grapes 2 cups, ginger juice ½ tsp, lemon juice 2 tsp, sugar 4 tsp, For the garnish A few mint (pudina) leaves. Combine all the ingredients with 1 cup water and blend in a mixer to get a smooth purée. Transfer into on a shallow container. Cover and freeze for 4 to 6 hours.Scrape out using a fork and serve chilled in small individual glasses. Black grape granita: The lovely deep purple colour is enough to entice one and all to go for it. Delicately flavoured with roasted cumin powder and black salt, this sorbet is sure to perk you up on a hot summer afternoon. black grapes 1 cup, banana, finely chopped 1, powdered sugar 2 tbsp, lemon juice ¼ tbsp, roasted cumin seed (jeera) powder 1 tsp, black salt (sanchal) ¼ tsp. Blend the black grapes and bananas to a fine purée in a food processor. Add the sugar, lemon juice, cumin seed powder, black salt and ¼ cup of water and mix well. Freeze in a shallow container till set (approximately 4 to 6 hours). Transfer to a blender and liquidise till it is slushy. Serve scoops of the mixture in 4 individual bowls or long stemmed glasses.Serve immediately. Strawberry Banana Apple Sorbet: Strawberry, apple & banana lend their unusual flavours to make this sumptuous sorbet. Bananas reduce the sharpness of the strawberries and impart a smooth and creamy texture to this sorbet. apple, peeled and chopped 1 cup, ripe banana, chopped 1 strawberries, sliced ½ cup sugar 3 tbsp, Blend all the ingredients in a liquidiser to get a smooth purée. Freeze in shallow containers. Chef Sanjeev Kapoor takes tour of White House kitchen

Indian Express, Agencies : Washington, India's celebrated chef Sanjeev Kapoor was given a rare insight into the historic kitchen of the White House, which prepares the food for US President Barack Obama, his family and the large number of guests invited to the resident of the first family every day.  Kapoor was not only given the tour of the historic kitchen, but also had an intensive discussion with the team of White House chefs led by its executive chef, William 'Bill' Yosses, for several hours yesterday.  He was accompanied by K N Vinod, an eminent Indian-American chef from Washington who runs three popular Indian restaurant in the nation's capital.  Yosses, said to be a great lover of Indian food himself, took Kapoor and Vinod around the White House kitchen, but also gave him a tour of the kitchen garden of the First Lady Mitchell Obama.  A frequent visitor to Indique and Indique Heights – the two popular Indian restaurants in the nation's capital – Yosses discussed at length of the growing popularity of Indian food in the US and at the white house.  Kapoor presented his latest encyclopedic work on Indian food, 'How To Cook Indian' to Yosses and submitted copies of it for the President and the First Lady.  "It was a great experience," Kapoor said after his, what he termed as – once-in-a-life experience.  "It is great to see how interest in India food is growing. When (Prime Minister) Manmohan Singh Comes (to the White House) Indian food being on the menu is quite understandable. But Indian food is being introduced in other ways also," he said.  Kapoor said, a trip to the White House Sunday, on the eve of Easter when it is expecting 30,000 visitors and the kitchen is making preparations for them, reflects the gaining importance and recognition of Indian food in the White House.  Yosses took them around and shared behind the scene preparations for the Easter.  Before visiting a White House kitchen, one would expect a fairly large, but that's not the case, he said.  "Being a chef I can tell you that cooking 4,000 people from that kitchen is not an easy thing, which can be very very challenging," Kapoor said. Source: Indian Express
